Morning Glorious Muffins Remake (Grain-, Dairy- and Refined Sugar-free)

A friend of mine asked me if I could do a recipe revision on one of her favorite muffin recipes.  Here's the result.

Ingredients:
1/2 cup coconut flour (2 oz. by weight)
1/2 teaspoon salt
1/2 teaspoon baking soda
2 teaspoons cinnamon

6 eggs
1/2 cup coconut oil
1/4 cup honey
2 Tablespoons vanilla

1 cup shredded zucchini or apple
1 cup shredded carrots
1/2 cup shredded coconut
1/4 cup dates, chopped
2/3 cup chopped walnuts (or other nut)

Method:
Mix the dry ingredients in a medium bowl.

In a large bowl, beat eggs until frothy.
Add coconut oil, honey and vanilla and beat until thick.

Add the dry ingredients to the wet ingredients and mix well.

Add the zucchini or apple, carrots, coconut and nuts and mix until just blended.

Divide batter into muffin cups.
Bake at 350* for 22-24 minutes, or until a toothpick comes out clean.
Makes 12 muffins.

Energy Bars

These are fantastic for hikes, bike rides, little bites when running, etc.

What you need:

2 cups crispy almonds.  Look here for how to make soaked crispy nuts.
1 cup shredded unsweetened coconut
1/4 cup sesame seeds

1/2 cup honey
1/4 cup cocoa powder, raw cacao powder or carob powder
1/4 teaspoon sea salt
2 teaspoons vanilla

Method:

Process almonds in food processor until finely ground.

Add coconut and sesame seeds and process until mixed well.

Melt together honey, your choice of cocoa, cacao or carob powder, salt and vanilla.
Add to mixture in processor and process until well blended.

Sandwich the mixture between greased sheets of parchment paper on a jelly roll pan.  I roll it out with a rolling pin or piece of PVC pipe until it's about 1/4 inch thick.

Refrigerate until firm and then cut into bars.

Aussie Bites Remake

My daughter-in-law is half Australian, so when I saw Aussie Bites at Costco, I thought I'd better buy them.  My granddaughter loves them, and goes to the pantry whenever they come to visit.  So, I decided I needed to figure out how to make them myself without some of the yucky stuff that is in the store-bought ones.  Here's my go at it.....

Ingredients

4 cups oats, ground
1 cup shredded coconut
2/3 cup chopped sunflower seeds
1/4 cup chopped flax seeds
1/2 cup chopped raisins
1/2 cup chopped dried apricots
1 teaspoon baking soda
3/4 teaspoon sea salt

1/2 cup butter
1/2 cup coconut oil
1/2 cup honey

1 Tablespoon flax seed ground and then mixed well with 6 Tablespoons water  (I use my Magic Bullet to grind the seeds and then add the water and whirl them up again.  I got mine at Costco.)

Mix all the dry ingredients together.

Mix butter, coconut oil and honey in a small saucepan and melt together. Pour over dry ingredients.

Add flax & water mixture to everything else and mix well.

I use a 2 T measuring cup, dip it into water and then press the oat mixture firmly into the little cup. In order to get it to release, I use a paring or table knife to break the suction and then plop it onto a parchment-lined baking sheet.

Bake for about 10 minutes in a 350* oven.

Makes about 36

They're really good. :-)
